Accept This Challenge!

Are you ready for a challenge that will give you more energy and provide you with healthy nutrients every day this month?

The daffodils are poking through the mud. The buds are forming on the trees. And GREENS are overflowing in my fridge! It is March the month of GREEN. And time for you to GO GREENS.

Green vegetables are lacking from the majority of all American dinner plates. Oh yeah, maybe you steam some broccoli once a week or munch on celery with those wings, but people our cells need greens! This month I ask beg you to join me in a GO GREENS challenge. 

Here it is:  Eat a GREEN vegetable every dinner this month!

(OK, I’ll let it slide if you eat it at lunch) But bonus points if you eat a GREEN vegetable at lunch and dinner. And heck, you’ll probably win the lottery, get a promotion and fit in your skinny jeans if you eat them at breakfast too! Maybe not the lottery or promotion, but I guarantee you’ll feel better and your body will begin to transform with the addition of more greens!

Today is March 1 and you still have time to get to the store for your greens. Go. Plan. What are you eating tonight? I’m having fish tacos topped with green cabbage slaw! All month I’ll be posting recipes on Wellness Roadtrip FACEBOOK page and on my blog.

Fish Tacos with Cabbage Slaw

1 lb. Mahi steaks
½ tsp. cumin
½ tsp. chili powder
½ tsp. onion powder
4 cups shredded cabbage
2 Tbs. lime juice
2 Tbs. olive oil + oil to coat fish
Salt and pepper to taste
6 tortillas or taco shells
Favorite taco toppings: salsa, cheese, avocado, tomatoes

Combine cumin, chili powder, and onion powder together.

Lightly coat the Mahi with olive oil. Sprinkle both sides of the fish with the spice mixture. You don’t have to use it all, save some for the next time. Set fish aside.

Combine the shredded cabbage in a large bowl.  Toss with lime juice, olive oil and season with salt and pepper. 

Grill the fish on medium high for approximately 8 minutes. Let the fish cool for 2-3 minutes and then gently pull apart. Fill taco shells with fish and top with a liberal amount of slaw and veggies. Serves 4-6.
