Recipe of the Week: Spicy Black Bean Salad
Here's a great summer side dish.
This recipe is more of a good combination of foods rather than a true recipe, but I loved it so much I had to share it.
While I used a mix of both canned items and fresh, you can choose to make it with any type of ingredients you like.
Spicy Black Bean Salad
What you need:
- 1 can black beans
- 1 can Mexican style tomatoes with green chiles
- 2 corn on the cob with corn cut off
- 1 cup fresh cilantro
What you do:
In a large dish or bowl, mix all of the ingredients after chopping up your cilantro. This should provide about four people with a side dish. Serve and enjoy!
